Vegan Version of Gigi Hadid’s Famous Pasta

I’m sure by now you’ve all seen the famous Gigi Hadid pasta floating around the internet so I decided to make a vegan version of it which is quite difficult because it’s basically all cream, butter and cheese. After many iterations, this is the best, creamiest version that even Chuck liked! Have you tried this yet?

INGREDIENTS:⁣

Pasta of choice ⁣

1/4 cup olive oil ⁣

2 tbsp green onion, chopped ⁣

2 cloves garlic, chopped⁣

1/4 cup tomato paste⁣

1/2 cup cream (I used unflavored oat milk creamer – I think canned coconut milk works well too)⁣

1 tbsp vegan butter (I used Miyoko’s Creamery)

1/4 cup vegan ricotta (I used Kite Hill – the creamer isn’t very thick so this helps to thicken the sauce and give it that dairy like base!)⁣

All the vegan parmesan (I used Follow Your Heart because it melts nicely) ⁣

Generous amount of crushed red pepper depending how spicy you want it

Salt and pepper to taste⁣

DIRECTIONS:⁣

Sauté chopped onion and garlic in olive oil until soft and lightly browned⁣

Add tomato paste and combine thoroughly⁣

Add cream; stir well ⁣

Add butter and ricotta if you’re using it ⁣

Add 1/4 cup of pasta water ⁣

Add parmesan until sauce thickens and gets very cheesy⁣

Season with crushed red pepper, salt and pepper⁣

Stir in pasta
