Everyone ready for fall raise your hand. These vegan MAPLE WHITE CHOCOLATE MACADAMIA cookies definitely give fall vibes – but really are perfect any time. I basically used the base of another one of my cookie recipes and just switched a few things up and they came out PERFECT (even Chuck said he wouldn’t change a thing).
2 cups GF flour
3/4 cup maple sugar
1/2 tsp baking powder
1/2 cup maple syrup
1/2 cup coconut oil
1/4 cup nut milk
1/2 tsp vanilla extract
White chocolate (I used Zimt)
Preheat oven to 350
Combine all ingredients EXCEPT CHOCOLATE, including chopped up macadamia nuts (about 1/2 cup)
Scoop onto a nonstick baking sheet, spaced out (it’ll make 9 cookies)
Bake for 10-12 minutes, until lightly brown
Add chopped white chocolate and let cool
