Vegan, GF, Refined Sugar Free Mini Cookie Pies

VEGAN, GF, REFINED SUGAR FREE MINI COOKIE PIES! This may be my best cookie creation yet – and it could not be easier to make! If you don’t wanna do the whole pie thing, you can just make them into regular cookies too.

INGREDIENTS:

1.5 cups almond flour ⁣

1/2 cup coconut sugar ⁣

1/3 cup coconut oil ⁣

1/3 cup coconut nectar (or syrup) ⁣

1 tbsp vanilla extract ⁣

1 tsp baking soda ⁣

Chocolate chips⁣

Flaked salt ⁣

DIRECTIONS:

Preheat oven to 350 Fahrenheit ⁣

Whisk together melted coconut oil, coconut sugar, coconut nectar and vanilla ⁣

Separately, thoroughly combine almond flour and baking soda ⁣

Combine wet and dry mixtures until blended well⁣

Bake for about 15 minutes (just keep an eye on them until they’re browning around edges)⁣

Remove, add chocolate chips and let them melt in (you can add them before you bake if you prefer)⁣

Sprinkle with salt and enjoy!⁣
