Well, it was pretty much a tie between sweet and savory in response to my question on my IG post, so I kinda did both. These VEGAN CARAMEL APPLE OAT BARS are totally customizable, so easy, and make a delicious, convenient breakfast or snack. In my next batch, I’ll add collagen protein or vanilla protein powder and have this post-workout to fuel me for a long day.
INGREDIENTS: (makes about 6 square bars)
2 cups oats or buckwheat (I used Bob’s Red Mill quick cooking oats)
3 tbsp oat flour
3 tbsp applesauce or apple butter
2 tbsp nut butter (I used cashew)
1/4 cup + 1 tbsp milk of choice
1/4 cup chia seeds
1/4 cup maple syrup
1 tsp vanilla
1/2 tsp cinnamon
Pinch of salt
*Chopped walnuts optional
Topping:
Apple butter
Nut butter + maple syrup – just mix about 3:1 until you have enough and it tasted caramel-y
DIRECTIONS:
Preheat oven to 350 Fahrenheit
Mix all of the ingredients together, blending thoroughly
Spray or line a pan and transfer mixture
Bake for about 20 minutes or until brown on top/edges
Remove, let cool and add toppings
