The only way I could ever eat “one serving” of trail mix. You feel me? Like what is that 1/4 cup business? I want the whole bag! I could seriously live off trail mix – it’s always been my favorite thing ever – so of course I had to make a trail mixy cookie! These were totally random but came out soo well! Maybe I’ll try a non chocolate version next — would you be interested?
INGREDIENTS:
1 1/4 cups almond flour
2 tbsp coconut flour
2/3 cup maple syrup
1/3 cup cocoa powder
1/4 tsp baking soda
1/3 cup coconut oil
1 tbsp arrowroot flour (optional but helps with binding & chewiness)
1 tsp vanilla
1 egg
Pinch of salt
Trail Mix:
I used walnuts, macadamias and Rawmio trail mix chocolate bar but you can use any mix of dried fruit and nuts
DIRECTIONS:
Preheat oven to 350 Fahrenheit
Combine all dry ingredients first, making sure there are no clumps
Add egg, maple syrup, coconut oil and vanilla; mix until smooth
Fold in desired fillings/toppings (I prefer mine loaded up!)
Scoop dough into a lined baking sheet, pressing down so they are about 1/2 inch thick
Bake for about 15 minutes – use a knife to test the middle for consistency
*I add extra chocolate at the last minute because I like some of it to just barely melt
Add some salt flakes on top
Remove, let cool & enjoy!
