Look, not cookies! Dinner last night was QUINOA CRUSTED SALMON and it was soo good – and husband approved. I roasted some bok choy at the same time, added a simple tahini sauce and it was all ready in 20 minutes. This is my new favorite way to make fish so I can’t wait to eat it all the time until I’m completely sick of it!
INGREDIENTS:
Salmon (or any fish of your choice)
Avocado oil
1/4 cup quinoa
1/4 tsp garlic salt
1/4 tsp dry mustard
Pinch of pepper
For tahini:
3:1 tahini to maple syrup
1/2 tsp ginger
Pinch of garlic salt
Generous amount of salt
DIRECTIONS:
Preheat oven to 400 Fahrenheit
Rinse and pat salmon dry; spray or brush with avocado oil
Mix all dry ingredients together and pour on salmon creating a thin layer
Spray or brush again with oil
Bake for 15-20 minutes
Broil at the end for 1 minute
