Are you team powdered donuts or glazed donuts? I can’t even tell you how many attempts and fails I had this week at making donut holes so I had to resort to my go-to life hack: pancake mix! I use it for baked goods when I’m feeling lazy or frustrated and that was me this morning. I’m still working on a super healthified low FODMAP version so stayed tuned – but for now, enjoy these easy peasy donut holes!
INGREDIENTS:
2 cups pancake mix (I used Birch Benders)
1/2 ish cup water
Powdered sugar (I used Lakanto)
A few tbsp milk of choice (I used hemp)
Vanilla extract
DIRECTIONS:
Preheat oven to 350
Mix pancake mix and water until JUST moist enough to hold together
Roll into balls and arrange on a baking sheet; bake for about 10 minutes
Remove, brush with water or milk, roll around in powdered sugar
For glaze:
Combine about 3/4 cup powdered sugar with a few tbsp milk
Dip donut in glaze and let harden (which I was too impatient to do here)
