Pretty sure these oatmeal granola cookies would pass as an acceptable breakfast – let me know what you think. These are just a simple oatmeal cookie base topped with cashew butter and my favorite Paleonola granola. Don’t be intimidated by the number of ingredients, most of them are pantry staples or easy to find.
INGREDIENTS:
1.5 cup oats
3/4 cup oat flour
3/4 cup coconut sugar
1/4 cup arrowroot
1/2 cup coconut oil or ghee
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp vanilla
1 egg
Pinch of salt
DIRECTIONS:
Preheat oven to 350 Farenheit
Combine all dry ingredients
Separately, combine wet ingredients then fold into dry mixture
Scoop 1 tbsp sized cookies (SPACED APART! These spread!) onto a lined baking sheet
Bake for about 10-15 minutes, until lightly browned
