If you’re ever home sick fighting a cold, ginger is good for colds. So naturally, ginger cookies should work, right? Do yourselves a favor and make these gluten free, refined sugar free gingersnap cookies this weekend! They’re so chewy and amazing. (I stuffed one with cashew butter which is what you see stacked on top!)
INGREDIENTS:
1 cup blanched almond flour
1 cup arrowroot flour
3/4 cup coconut or maple sugar
1/2 cup ghee
1 egg
2 tsp baking soda
2.5 tsp ginger
1 tbsp date syrup
1 tsp vanilla
1 tsp cinnamon
1/2 tsp salt
DIRECTIONS:
Combine ghee, vanilla, syrup and egg
Separately, mix sugar, spices, salt, baking soda, almond flour and arrowroot until there are no clumps; add in wet mixture and stir until dough forms
Put dough in refrigerator for 30-60 mins (I couldn’t wait longer than 30!)
Preheat oven to 350
Scoop 2 inch balls onto baking sheet & press down until 1/2 inch thick; dust in coconut sugar
Bake for 8-10 minutes (until brown on edges)
