Fluffy Hazelnut Pancakes


WOW it has been FOREVER since I’ve written a blog post. Honestly, I miss it and have every intention of picking it back up at least weekly. No better way to ease back into it than with a recipe, so without further ado (you know I loathe lengthy recipe intros) here are my fluffy, moist gluten free, grain free, dairy free, sugar free hazelnut pancakes!

INGREDIENTS:

2 cups hazelnut flour (you could also use almond meal)

2 eggs

3/4 cup dairy free milk of choice (I used macadamia nut)

1 tbsp chia seeds

1 tbsp monk fruit extract

1/2 tsp cinnamon

1/2 tsp baking powder

1/4 tsp salt

DIRECTIONS:

blend all dry ingredients to ensure even distribution

mix in wet ingredients

heat ghee or oil of choice on a skillet over medium-high heat

pour pancakes, making sure they don’t run into each other

cook until bubbling around edges and middle; flip

remove and enjoy!
