CREAMY VEGAN BUTTERNUT SQUASH PASTA, aka all my favorite things in one dish! I’ve been living off butternut squash bisque so I thought… why not turn this into a sauce and pour it over some pasta? Well, it did not disappoint! Feel free to modify and add chicken or more veggies.
INGREDIENTS:
3 cups cubed butternut squash
1/4 cup chopped yellow onion or shallot
1 clove garlic, chopped
2-3 tbsp olive oil, ghee or vegan butter
1/2 cup broth of choice
1/2 cup milk of choice
1/2 cup nutritional yeast
Salt and pepper to taste
Pasta of choice
DIRECTIONS:
Boil cubed squash in a large pot until they are just cooked through
Strain and add back to pot with chopped onion, garlic and either oil or butter
Sauté until onions begin to lightly brown
Let cool for a few minutes before blending
Add to blender with broth and milk; blend until creamy
Add nutritional yeast and continue blending
Taste the sauce and add salt and pepper to your liking (feel free to add herbs such as sage or rosemary)
Pour over pasta and veggies of choice and enjoy! I topped mine with red pepper for a little kick!
