Gluten free, refined sugar free cinnamon toast crunch! This was my favorite growing up and I’ve been craving it soo here we are!
INGREDIENTS:
1.5 cups almond flour
3/4 cup coconut sugar
1 egg
2 tbsp ghee or coconut oil (ghee really makes it taste authentic though)
1 tbsp chia seeds (optional but gives a nice crunch)
1 tbsp cinnamon
1 tsp apple cider vinegar
Pinch of salt
Water
DIRECTIONS:
Preheat oven to 375 Fahrenheit
Combine dry ingredients first, then add in wet ingredients; you may need to add a tsp water to get the dough to really mix
Line a baking sheet with parchment paper and roll dough into strips, about 2-3 inches wide
Flatten to about 1/8” (result should be as long as the width of the baking sheet and a few inches wide)
Use a sharp knife to cut lines where you will break the pieces apart
Bake for about 8-10 minutes, checking periodically
Once they are starting to rise a bit, remove from oven and flatten again! I just placed a paper towel on top and gently pressed down
Dust with additional coconut sugar
Return to oven until they start to brown
Remove, let cool and enjoy!
