Since we have a little more time on our hands with social distancing, it’s a perfect time to do some baking. I adapted these BANANA CHOCOLATE CHIP BARS from Beaming Baker with just a few tweaks and they are absolutely delish.
INGREDIENTS:
1 banana
1.5 cups rolled oats
1/4 cup cashew butter
2 tbsp maple syrup
1 tbsp coconut oil
1 egg
1 tsp vanilla extract
1/4 tsp baking soda
Pinch of sea salt
Toppings/filling:
Evolved Chocolate bar
1/2 cup shredded coconut for filling
Flaked coconut for topping
1/4 cup sliced almonds
DIRECTIONS:
Preheat oven to 350 Fahrenheit
Mash banana then mix in wet ingredients until smooth
Add dry ingredients and fillings
Add to a lined 8×8 baking sheet and bake for about 10 minutes
Add flaked coconut and cook another 2-3 minutes until browned
