Blueberry Orange Muffins

My husband is a muffin connoisseur so usually NONE of my healthified muffins pass his test. THESE blueberry orange muffins, however, are always devoured in a matter of minutes soo I would def add these to your morning line up!⁣

INGREDIENTS:

2 cups almond flour

3 eggs

2 tbsp coconut oil

2 tbsp orange juice

1/4 cup maple syrup

3/4 tsp baking soda

1/2 tsp almond extract

Blueberries (or cranberries)

Coconut sugar for topping

DIRECTIONS:

Preheat oven to 325 F

Line or grease a muffin sheet

Combine all ingredients, folding in blueberries LAST and do not stir vigorously once they’re added!

Fill muffin molds to the top (this made 4 muffins for us)

Bake for 40 minutes or until they’re browned and pass the knife test, adding additional blueberries and a sprinkle of coconut sugar on top in the last 5-10 minutes
