If you follow me over on instagram you’ve seen me post these cookies – like a lot. They are one of the first recipes I came up with and they are a hit with absolutely everybody who I’ve ever made them for.
They are:
VEGAN, GLUTEN FREE, REFINED SUGAR FREE, GRAIN FREE so they’re pretty much air, right?
Run, don’t walk, to make these!
INGREDIENTS:
* 2.5 cups almond flour
* ½ – 3/4 cup coconut sugar
* ½ tsp baking soda
* 1 tbsp chia seeds
* 1 cup nut (or seed) butter (I like cashew)
* ½ cup maple syrup (or lakanto maple syrup)
* 1 tbsp apple sauce
* 1 tsp pure vanilla extract
* 1 Hu Dark Chocolate Cashew Butter Bar
* salt flakes, for topping
DIRECTIONS:
Combine all ingredients; extra points if you can refrigerate dough for 30 mins before baking
Roll into about 7 balls and flatten into patties about 1/3 inch thick; place on cookie sheet
Bake at 350 for 10-12 minutes or until starting to brown
Add chocolate for 1 minute at the end
One of the great things about this recipe is that it doesn’t have to be precise! I never actually measure anything out i just eyeball it and taste as I go. ENJOY the chewy gooeyness and tag me #tbfcrowdpleaser when you make them!
