These are probably my favorite cookies I’ve ever made and that is saying a lot because, you know, I LOVEEE cookies. They’re chewy on the inside, crispy on the outside, and customizable with what you decide to stuff them with. You know I hate long intros so let’s get down to it!
INGREDIENTS: (click here for shoppable Amazon list)
1 cup paleo flour
3/4 cup coconut sugar
1/4 cup arrowroot flour
1/4 cup monkfruit extract or xylitol
1/4 cup maple syrup or coconut nectar
2 tbsp ghee
2 tbsp milk of choice (you can omit this for extra crisp, or omit and add more ghee if you like the buttery flavor)
1 egg yolk
1 tsp vanilla
1/2 tsp baking powder
Salt to taste
STUFFING:
Eating evolved caramel cups (included in Amazon list above – but you can use anything you’d like)
DIRECTIONS:
Preheat oven to 350 degrees Fahrenheit
In mixing bowl, combine all DRY ingredients
Add wet ingredients (ghee will have to be melted)
Refrigerate for at least 30 minutes
Roll dough into balls, about 2 inches around; space them out on baking sheet as they spread considerably and flatten
Sandwich stuffing between dough balls and push top one down around edges just enough so that it begins to envelop stuffing (am I explaining this well? No?)
Bake for ABOUT 10 minutes; this WILL VARY depending on oven, size of cookies, stuffing etc. so just keep an eye out. You’ll know they’re done when they have flattened and are browned around edges.
Remove and let cool, allowing filling to harden (I refrigerated mine for 15 minutes) before eating.
