OK, I haven’t had Chinese in years so I can’t say for sure but my husband said that’s what this 5-minute healthy lo mein tasted like. So quick and delicious!
1 cup peanut butter (sub cashew if you’re peanut-free)
1/2 cup coconut aminos
1/2 cup honey
1/2 cup coconut cream
1 tbsp sesame oil
LOTS of fresh minced garlic and ginger
Noodles (I used brown rice Asian noodles)
Veggies of choice (I used broccoli, mushrooms, cabbage, and green onions; you can use anything you have on hand)
Blend all sauce ingredients
Cook noodles and steam veggies
Combine with sauce and serve!
PRO TIP: Refrigerate and eat cold. It’s unreal!
