Well technically there are more ingredients if you’re counting the glaze but the point is, you probably have everything you need to whip these up. These are for those of you who want a lemon treat without all the work & mess (aka me!). They seriously these could not be easier and the perfect little springtime treat.
1 cup almond flour
1/4 cup coconut sugar
1 lemon + 2 tbsp water
1/2 tsp baking powder
Optional: salt, vanilla extract, chia or poppy seeds
Coconut cream (or milk, coco oil)
Preheat oven to 350
Mix dry ingredients, juice of 3/4 of a lemon + 2 tbsp water
Scoop onto cookie sheet (this makes about 5 small cookies)
Bake for 10-15 mins depending on your oven
In a separate bowl, combine the hard part of a can of coconut cream (I just eyeballed this, no real measurements) and a tbsp or 2 of honey; let sit in fridge for a few minutes to thicken
Let cookies cool & glaze
