This Vegan Tahini Mac & Cheese is one of my favorite easy comfort foods and I made it more festive by adding some pumpkin (you can omit or add some butternut squash which would be good too)! I like to throw in some roasted vegetables and use chickpea or lentil pasta for some protein. It’s the ultimate comfort food!
INGREDIENTS: (makes about 4 servings)
Pasta of choice (I like chickpea or lentil)
3/4 cup milk (hemp is nice and creamy for this)
1/3 cup tahini
3/4 cup nutritional yeast
1/4 cup olive oil
1/4 cup lemon juice
1 tsp garlic powder (or fresh garlic)
1/2 tsp onion powder (optional)
1/4 tsp smoked paprika (optional but delish)
2-4 tbsp pumpkin purée
Lots of salt!! It’ll taste super bitter without!
Blend all ingredients and pour over pasta of choice
