VEGAN, GF, REFINED SUGAR FREE MINI COOKIE PIES! This may be my best cookie creation yet – and it could not be easier to make! If you don’t wanna do the whole pie thing, you can just make them into regular cookies too.
1.5 cups almond flour
1/2 cup coconut sugar
1/3 cup coconut oil
1/3 cup coconut nectar (or syrup)
1 tbsp vanilla extract
1 tsp baking soda
Preheat oven to 350 Fahrenheit
Whisk together melted coconut oil, coconut sugar, coconut nectar and vanilla
Separately, thoroughly combine almond flour and baking soda
Combine wet and dry mixtures until blended well
Bake for about 15 minutes (just keep an eye on them until they’re browning around edges)
Remove, add chocolate chips and let them melt in (you can add them before you bake if you prefer)
Sprinkle with salt and enjoy!
