Snickers Ice Cream Bars

My friend challenged me to make healthier Snickers ice cream bars, and I have to say, I nailed it! Full disclosure, I eyeballed everything but this is my method!⁣ Oh and by the way, they’re vegan!


1 pint vegan vanilla ice cream (I used Craig’s)

2 cups peanuts ⁣


1 cup peanut butter

3/4 cup coconut oil ⁣

3/4 cup maple syrup ⁣

NOUGAT: (honestly you could omit this and it’d still be amazing)⁣

1/2 cup almond flour ⁣

1/2 cup coconut flour

1/2 cup maple syrup ⁣

1/4 cup nut milk⁣

1/2 tsp vanilla ⁣


Hu chocolate bars ⁣

Sea salt ⁣


*I used a paper loaf pan because it was easy to peel off once everything was frozen so I highly recommend this method! Not sure how it would work in metal⁣

Add ice cream to loaf pan and smooth it down so it’s all even ⁣

Add nougat (if using) and press to pack it down⁣, then add the peanuts

Pour caramel mixture over the top and FREEZE until hard ⁣

Separately, melt chocolate in a pan over low heat (add a few tbsp coconut oil so it doesn’t stick) and pour over frozen ice cream/caramel bar⁣

Freeze again then remove from pan and slice UPSIDE DOWN so starting to cut through the bottom and cutting the top layer last (this prevents the chocolate coating from breaking)⁣
