Got out of bed at 2 p.m. and made pasta sooo 2021 is off to a….. start? I saw something similar to this on Bon Appetit recently which gave me the inspo and while I didn’t follow a recipe, I’ll share what I did!
Pasta of choice (I used Jon & Vinny’s)
1/2 lemon – I picked mine right off my tree!
1/4 cup ghee (you can use olive oil or a vegan substitute)
1 clove garlic
Crushed red pepper
Salt to taste
Cook pasta until al dente
In a skillet, heat ghee or oil over medium low heat and add thin slices of lemon and chopped garlic
Simmer until both are browning
Toss with pasta and add crushed red pepper, sea salt and sprinkle with your choice of cheese (I used Parma! Vegan Parmesan)
