Quinoa Crusted Salmon

Look, not cookies! Dinner last night was QUINOA CRUSTED SALMON and it was soo good – and husband approved. I roasted some bok choy at the same time, added a simple tahini sauce and it was all ready in 20 minutes. This is my new favorite way to make fish so I can’t wait to eat it all the time until I’m completely sick of it!

INGREDIENTS:

Salmon (or any fish of your choice)

Avocado oil

1/4 cup quinoa ⁣

1/4 tsp garlic salt⁣

1/4 tsp dry mustard ⁣

Pinch of pepper⁣

For tahini:⁣

⁣3:1 tahini to maple syrup⁣

1/2 tsp ginger⁣

Pinch of garlic⁣ salt

Generous amount of salt ⁣

DIRECTIONS:

Preheat oven to 400 Fahrenheit⁣

Rinse and pat salmon dry; spray or brush with avocado oil⁣

Mix all dry ingredients together and pour on salmon creating a thin layer ⁣

Spray or brush again with oil ⁣

Bake for 15-20 minutes ⁣

Broil at the end for 1 minute ⁣
