Maple Cinnamon Grain Free Granola

Red, white and blue yogurt bowl for Memorial Day seemed appropriate. Also this just happens to be the best ever homemade MAPLE CINNAMON GRAIN FREE GRANOLA (similar to the one I buy) and it could not be easier! Feel free to use whatever nut/seed combo you like.

INGREDIENTS:

3/4 cup chopped walnuts

3/4 cup chopped pecans

3/4 cup slivered almonds

2/3 cup pumpkin seeds

1/2 cup sunflower seeds

1/4 cup chia seeds

1/2 cup flax meal

1/2 cup coconut oil (melted)

1/3 cup maple syrup

1/4 cup coconut flakes

1 tbsp vanilla

2 tsp cinnamon

Pinch of sea salt

*almond or coconut flour to absorb excess moisture

DIRECTIONS:

Preheat oven to 300 degrees Fahrenheit

In a large bowl, combine all nuts, seeds and flax meal (you can use flax seeds too)

Add melted coconut oil, maple syrup and vanilla and stir well

Add cinnamon and stir again

Add just enough almond or coconut flour to absorb excess liquid and blend

Pour mixture onto a baking sheet lined with parchment paper in an even layer; sprinkle coconut and salt on top

Bake for 15-20 minutes, or until lightly browned

Remove, let cool (so it’s chewy) and enjoy!
