I’m back with more chia deliciousness! Pancakes sans eggs can be tricky but these babies are fluffy, rich, the perfect amount of sweet and savory and just plain delectable. Load with your favorite toppings or even add some to the mix; they are thick and can withstand some extra ingredients thrown in there. As usual these are free of gluten, dairy and refined sugar. Ingredients:
2 cups GF flour
3 tbsp chia seeds
1 tbsp baking powder
1 1/4 cup nut milk
3 tbsp agave
1 tbsp apple cider vinegar
Directions:
Combine all ingredients and let sit for 5 minutes
Grease skillet with coconut oil over medium heat
Pour pancakes onto skillet (one or two at a time depending on how big you want them)
When pancake starts bubbling at edge, flip to other side
Remove once pancake is lightly browned on each side
