Creamy Vegan Butternut Squash Pasta

CREAMY VEGAN BUTTERNUT SQUASH PASTA, aka all my favorite things in one dish! I’ve been living off butternut squash bisque so I thought… why not turn this into a sauce and pour it over some pasta? Well, it did not disappoint! Feel free to modify and add chicken or more veggies. ⁣

INGREDIENTS:

3 cups cubed butternut squash⁣

1/4 cup chopped yellow onion or shallot⁣

1 clove garlic, chopped⁣

2-3 tbsp olive oil, ghee or vegan butter⁣

1/2 cup broth of choice⁣

1/2 cup milk of choice⁣

1/2 cup nutritional yeast ⁣

Salt and pepper to taste ⁣

Pasta of choice ⁣

DIRECTIONS:

Boil cubed squash in a large pot until they are just cooked through ⁣

Strain and add back to pot with chopped onion, garlic and either oil or butter⁣

Sauté until onions begin to lightly brown ⁣

Let cool for a few minutes before blending ⁣

Add to blender with broth and milk; blend until creamy ⁣

Add nutritional yeast and continue blending⁣

Taste the sauce and add salt and pepper to your liking (feel free to add herbs such as sage or rosemary)⁣

Pour over pasta and veggies of choice and enjoy! I topped mine with red pepper for a little kick!⁣
