My favorite chia pancakes got a major upgrade using Ancient Nutrition vanilla bone broth protein. I make these all the time and honestly can’t believe I’ve never done this before now! The combo of healthy fats, with the protein, keeps me full all morning.
2 cups almond flour
1-2 scoops Ancient Nutrition vanilla bone broth protein
1/4 cup coconut oil
1/4 cup water
1/4 cup chia seeds (optional)
2 tbsp vanilla
1/2 tsp salt
1-2 tsp monk fruit extract (you could also add 2-4 tbsp syrup or coconut sugar depending on how sweet you like your pancakes)
Combine all ingredients and stir until smooth
Pour over preheated greased pan
Cook until lightly browned on each side
I topped with some coconut yogurt, berries and syrup
