Buckwheat Porridge

Has anyone else been scared of carbs in the past? This buckwheat porridge would have been an absolute NO GO for me a few years ago. Now it’s my favorite meal post-workout and keeps me full and energized till the afternoon. ⁣If I deprive myself of what my body needs, I will eat 10 other things to try to feel satisfied – it’s as simple as that. Melissa Wood-Tepperberg and I discussed this on the podcast and I also go into it on my solo episode. ⁣You guys said you wanted more of my day-to-day real life meals, so while this is not necessarily drool-worthy it’s a staple lately and it’s delish! ⁣

INGREDIENTS:

1/4 cup buckwheat hot cereal (I use Bob’s Red Mill)⁣

1 scoop (20g protein!) of vanilla plant based protein powder⁣

Chia seeds⁣

Strawberries ⁣

Shredded coconut ⁣

Cacao nibs ⁣

Almond butter ⁣

DIRECTIONS:

Combine buckwheat and about 3/4 cup water and slowly bring to a boil ⁣

Reduce heat to medium and stir frequently until the consistency is creamy, then add protein powder (you may have to add more water to absorb powder)⁣

Transfer to a bowl, add toppings and ENJOY!⁣
