Brown Butter, Sage & Butternut Squash Pasta

You can make this pasta dish vegan or non-vegan and it is truly the BEST fall comfort food. There are so many variations of this recipe out there so this is my take on it!⁣⁣

INGREDIENTS:

Pasta of choice (I like rotini for this)

4 cups cubed butternut squash

2 cloves garlic

3 tbsp butter of choice (can be vegan)

4 tbsp olive oil

Fresh sage

Salt and pepper

Pine nuts (optional)

Cheese of choice

DIRECTIONS:

Sauté chopped garlic and butternut squash over low heat, covered for about 15 minutes or until squash is soft

⁣Separately, cook pasta and make sure you save 1/2 cup pasta water

Add butter and sage; sauté over medium heat until the butter browns a bit 

Add pasta water and continue to simmer until sauce thickens

Add salt and pepper to taste

Remove, add pasta and toppings and enjoy!
