2-MINUTE ENGLISH MUFFINS with cashew butter & homemade raspberry jam. After quite a few baking fails I decided to resort to this foolproof recipe for an easy homemade version of PB&J. It’s such a great recipe!
1/4 cup almond flour
1 tbsp arrowroot (or coconut flour)
1 tbsp ghee (or coconut oil)
1/8 tsp baking soda
1/4 tsp salt
1/4 cup fresh raspberries
1 tsp chia seeds
Combine all dry ingredients; then add egg and ghee/oil, mixing until smooth
Add to a mug or ramekin
Microwave for 2 minutes
Remove, slice and toast
Mash raspberries and mix with chia seeds – add sweetener of choice if you want extra flavor
