2-Minute English Muffins with Cashew Butter & Homemade Raspberry Jam

2-MINUTE ENGLISH MUFFINS with cashew butter & homemade raspberry jam. ⁣After quite a few baking fails I decided to resort to this foolproof recipe for an easy homemade version of PB&J. It’s such a great recipe!

INGREDIENTS:

ENGLISH MUFFINS

1/4 cup almond flour ⁣

1 tbsp arrowroot (or coconut flour) ⁣

1 egg⁣

1 tbsp ghee (or coconut oil)⁣

1/8 tsp baking soda⁣

1/4 tsp salt⁣

RASPBERRY JAM

1/4 cup fresh raspberries ⁣

1 tsp chia seeds⁣

DIRECTIONS:

MUFFINS

Combine all dry ingredients; then add egg and ghee/oil, mixing until smooth

Add to a mug or ramekin ⁣

Microwave for 2 minutes⁣

Remove, slice and toast ⁣

JAM

Mash raspberries and mix with chia seeds – add sweetener of choice if you want extra flavor⁣
