I can’t stand a long intro into a recipe. I don’t want to look at seventeen photos of cookies in various stages of mix with a story about childhood. Please tell me I’m not the only one! So all I’ll say is that if you liked my Chocolate Chia cookies, or if you like vegan, gluten free, grain free, dairy free, refined sugar free, soy free sweets – seriously – you’ll love these. Enjoy!
INGREDIENTS:
1 and 1/2 cups almond flour
3/4 cup cashew butter (or nut/seed butter of your choice)
1 individual unsweetened applesauce
3/4 cup coconut sugar
3 tbsp maple syrup
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp sea salt (plus extra to top after they’re cooked)
1tsp vanilla
Hu Kitchen chocolate (or chocolate of your choice, including chocolate chips if desired)
DIRECTIONS:
Preheat oven to 350 degrees fahrenheit
blend all ingredients except chocolate, stirring until COMPLETELY smooth and combined
if you’re adding chocolate chips, fold in to mix
add to lined cookie sheet, forming six round cookies (do not flatten)
bake for 12 minutes
remove, add a square of chocolate to each, and place back in oven for 3 minutes
let cool, add a pinch of sea salt and enjoyyy!
